Opening Week

Luckily, I was born into a family who are Red Sox Season Ticket holders. I tend to take it for granted. I’ve never realized how much games cost or even how hard it is to get a pair of tickets — with that being said, I enjoy bringing a new friend with me to each game to give them the ball park experience everyone should have.

On Saturday I watched the Red Sox battle their long time rival the New York Yankees. Even though the Red Sox lost, I still enjoyed myself. It was the first warm, non-rainy day in April. As I watched the game, I enjoyed a pricey $8.50 draft beer and a Fenway Frank. I couldn’t have asked for a better day.

Famous Whoopie Pies

Yesterday was the laziest Sunday I’ve had in a while. To take up some of my free time, I decided to whip up a batch of my Mom’s famous Whoopie Pies.

Below is the Whoopie Pie recipe:

  • 1/2 cp. shortening (crisco)
  • 1 egg
  • 1/2 cp. powdered cocoa
  • 1 tsp. vanilla
  • 1 cp. sugar
  • 1 cp. milk
  • 2 cp. flour
  • 1 1/2 tbs. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Heat oven to 450. Mix all ingredients in one bowl. Drop by tsp. on ungreased cookie sheet. Bake 7-8 minutes. While those are finishing baking and set to cool, the next step is to create the filling.

  • 3/4 cp. shortening (crisco)
  • 1 cp. marshmellow (fluff)
  • 1 tsp. vanilla
  • 1-2 cp. confectionary sugar
  • add a little milk

Blend & fill Whoopie Pies.
